Thanks to the excellent workability it gives to the dough, it provides soft texture in chapati production and ideal inner cavity (pocket) formation in pita bread production. While increasing dough efficiency with its high water absorption capacity, it prevents the products from drying out after baking, preserving freshness for a long time.
